有些朋友不愛吃西蘭花莖,會丟掉,但用來炒飯也不錯,今次我們做一道「芝士雜菜飯釀彩椒」~
材料 4人份
燈籠椒 4個
蕃茄 2個
紅蘿蔔 1條
西蘭花莖 2個
冷飯 2碗份量
磨菇 6粒
車打芝士 200克
辣椒(切片) 1條
鹽 適量
油 適量
黑椒 適量
紅椒粉 2茶匙
蒜蓉 15克
- 將材料清洗乾淨。將燈籠椒的頂部切出,去椗、籽備用。
- 將西蘭花莖、紅蘿蔔、蕃茄和磨菇切粒。
- 預備煎鍋,中火燒熱油,爆香蒜蓉,加入西蘭花莖粒和紅蘿蔔粒炒熟,之後加入蕃茄粒和磨菇煮熟。加入適量鹽、黑椒、紅椒粉和辣椒調味,之後加入白飯拌勻,煮熱後熄火。熄火後,加入一半車打芝士拌勻。
- 預熱焗爐至180度。
- 將雜菜飯釀入燈籠椒,放上適量車打芝士,將整個燈籠椒、燈籠椒頂放上焗盤,在燈籠椒頂淋上少許油。
- 將焗盤放入焗爐,焗約20分鐘。
- 最後蓋上燈籠椒頂即成。
Don’t toss any broccoli stalks~ Use broccoli stalks and other veg to make roasted stuffed bell pepper. It is easy to make, creamy and tasty~
Ingredients
4 Bell Peppers
2 Tomato
1 Carrot
2 Broccoli stalks
2 bowls Leftover rice
6 Mushroom
200 g Shredded Cheddar cheese
1 Chili (sliced)
Salt
Oil
Black Pepper
2tsp Hot Paprika Powder
15g Minced Garlic
- Slice off the top of each pepper and remove the stem. Remove the seeds and innards.
- Dice the broccoli stalks, carrot, tomatoes and mushroom.
- Heat oil in a pan, add the minced garlic. Add the diced broccoli stalks and carrot to the pan, cook until soft. Add the tomato and then mushroom. Stir fry until cooked. Add the rice to the pan. Heat and mix well. Flavor it with salt, black pepper and paprika powder. Turn off the stove. Add half of the cheddar cheese to the rice, mix well.
- Preheat the oven to 180°C.
- Scoop the rice mixture into the peppers, top with the remaining cheddar cheese.
- Put the stuffed peppers and the pepper slices on a baking tray. Drizzle the pepper slices with oil. Bake until peppers are tender, about 20 minutes.
- Cover each stuffed pepper with the pepper slices.
