炸紅蘿蔔薯波- 湯渣不浪費 Carrot & Potato Croquettes 【惜食食譜 Leftovers Recipes】

剩下來的湯渣紅蘿蔔和薯仔,不要浪費,用來做炸薯波!

材料 3人份 Serves 3
湯渣薯仔、蘿蔔
雞蛋(打散) 3隻
紅椒粉 2茶匙
麵包糠 適量
蛋黄醬 適量
黑椒 1/2茶匙
生粉 適量
鹽 1/2茶匙
油 適量

步驟

  1. 將湯渣薯仔、蘿蔔用叉壓成蓉。
  2. 薯仔蘿蔔蓉加入紅椒粉、鹽、黑椒和2茶匙生粉拌勻。
  3. 取約一湯匙薯仔蘿蔔蓉,搓成球狀。
  4. 將每個薯波順序蘸上生粉、蛋漿和麵包糠。
  5. 中火燒熱油,加入薯波炸至金黃色,撈起並瀝走油份即可上碟。
  6. 唧上適量蛋黄醬調味即成。

Carrot & Potato Croquettes

Ingredients
Potato and carrot (leftover soup ingredients)
3 egg, lightly beaten
2 tsp Paprika Powder
1/2 tsp Salt
1/2 tsp Black pepper
Panko (Japanese breadcrumbs)
Oil
Potato starch
Mayonnaise

Steps

  1. Mash the potato and carrot using a fork.
  2. Add paprika powder, salt, black pepper and 2 tsp of potato starch into the potato and carrot puree. Mix well.
  3. Roll the potato mixture into small balls.
  4. Coat each croquette with potato starch and then coat with the beaten egg. Then roll in
  5. In a medium pan, heat oil over medium heat. Fry the croquettes in batches until golden brown. Drain the excess oil.
  6. Drizzle some mayonnaise over the croquettes.

Tips
You could adjust the seasoning according to your taste.
